Cheeri Breakfast Cookies

Made these twice this week – they are a new keeper! I wanted to use up some plain cheerios that didn’t seem to get eaten in our house. Lately I have enjoyed making oat flour as a white flour substitute by just putting oats in the blender, so I wondered if I could do the same with cheerios, which are oat based. I found this recipe for these cookies and just modified them a little bit to suit what I had in my kitchen.

We brought them on the camping trip, and they were at least a hit among us Moms. They are dairy free, gluten free, and the only sugar is from honey, so they are a great low-sugar cookie to keep on hand! 🙂

Cheeri Breakfast Cookies

2.5 cups oats
4 cups cheerios
1/4 c. coconut oil (or any oil type)
1/2 c. peanut butter
1/3 – 2/3 c. honey
1 mashed banana
2 eggs
1 t. vanilla
1/2 t baking soda
1/2 t. salt
handful or two of cranberries

Put the oats and cheerios in blender and chop them up fine. Mix all the wet ingredients together. Incorporate all. Make balls and flatten them a little bit. Bake 350 degrees for 12 minutes.

    I once made rice crispy treats from cheerios. They were not very good.
